Often viewed as the test of a good chef, risotto takes culinary skill and patience as flavors must be coaxed into each grain of arborio rice. Arborio rice is larger than local rice varieties. It has the ability to absorb a lot of liquid, yet at the same time retain its integrity, resulting in a creamy dish of savory rice where each flavorful grain is still distinct while clinging to its neighbor.
While the Risotto with Saffron and Bone Marrow and the Risotto with Four Cheeses are more traditional menu items (the former being the representative risotto dish of Milan), the other risotto dishes combine various ingredients in fresh new ways.
