The sea bass Kaiseki--traditional Japanese-style cuisine-- is 9 courses which include braised sea bass and fried sea bass with ginkgo berries, lotus root and burdock. Sea bass is a summer health food rich in amino acids and vitamins.

The Sea bass Kaiseki menu starts with 5 seafood delicacies accompanying sea urchin eggs, tofu, eel and mango. Clear sea bass soup, sea bass sashimi and broiled sea bass with pumpkin, braised sea bass with carrots, mushrooms and sea tangles follow. Japanese U-dong with sushi will be prepared as a main course.

You can enjoy the genuine delicacy of ice sea bass during the summer. When you rinse the sea bass filet, which is cut thin and narrow, in cold water the oil is washed away. After the water is squeezed out, the sea bass is placed on ice and eaten. In this way, the true taste of this fish can be enjoyed.
